Easy Shepherds Pie For Two

Who doesn’t like a quick easy meal that they can just throw in the oven and go?
This shepherds pie not only is quick to prepare, but is also great to meal prep, freeze and reheat a different day.
Kyle and I have been loving making shepherds pie, it’s tasty, it’s comfort food, its warm and its super easy. This makes enough for the two of us with some extras for lunch the next day!

For the Potatoes
– 4 Large Potatoes (chopped into small pieces)
– 2 TBSP Butter
– 1/2 cup of milk
– 1 clove of garlic (minced)
For the Meat:
– 1/2 tbsp olive oil
– 1/2 ground beef (thawed)
– 1/8 tsp salt
– 1/8 black pepper
– 1 medium onion (chopped)
– 2 cloves garlic (minced)
– 2 stalks celery (chopped into small pieces)
– 1 pkg brown gravy (whisk with 1/2 cup of water)
– 1/2 cup frozen corn
– 1/2 cup frozen mixed vegetables

– Cut up potatoes into small cubes (if you make them small cubes they take a bit less time to cook)
– Put the Potatoes in a pot, cover with water and bring to a boil on high
– Once they have boiled turn the temperature down to medium heat and cook until tender (I was able to prepare everything else while they were cooking)
– After the potatoes are tender, strain them
– Add butter and garlic and mash the potatoes
– Add in milk and continue to mash until desired consistency

– Preheat oven to 450 degrees
– Heat oil in a large frying pan on medium heat, add meat and brown
– Once meat is browned add onions, celery and garlic, cook until tender
– Add the gravy mix to the meat mixture (do not make as instructed on the package rather mix with 1/2 cup of water)
– Cook until heated all the way through and the gravy begins to thicken (approx. 2 min.)
– Place in the bottom of a casserole dish (I used a small oval Corningware dish)
– Layer the frozen corn and frozen mixed vegetables on top of the meat
(at this point my potatoes were cooked and I mashed them together)
– Layer the mashed potatoes on top
*** You can add shredded cheese on top of the potatoes if desired***
– Place casserole dish in heated oven and bake for 20 minutes
***If you are preparing ahead you can now allow this to cool to room temperature, cover with tin foil and freeze, to reheat cook in over at 400 degrees for one hour or until the centre is warm***

  1. Mmm. I should make this! Maybe I can get some small tin dishes to bake them in and freeze them for dinners.

    Also – you should totally share your workout schedule sometime!
